AUTUMN SPOTLIGHT
Some of the highlights our members can look forward to this season….
SOURDOUGH
Throughout September you’ll see the baking community alive with talk of all things sourdough. Our online sourdough sessions give members the chance to really get to grips with sourdough baking in the comfort of their own kitchen. Gain the confidence, skills and knowledge to create excellent results every time, at home. Our expert bakery teachers break down the terminology, the steps and methods to take you further in your baking journey, every session is live so you can put your questions to the team.
HERITAGE GRAINS
Learn to bake with spelt flour. Alternative and heritage flours can seem daunting to both new and experienced bakers alike. Enjoyed by many for its unique flavour and lower gluten content, spelt has certainly grown in popularity in recent years. Through our heritage grains workshop you’ll create three distinct spelt based recipes, from a high hydration rustic loaf, a sourdough spelt pizza and some oat and raisin cookies. We hope that you’ll see how easy, delicious and rewarding it can be to bake with spelt flour and continue to explore spelt further in your bakes.
BA & THE TOMATO STALL
We’ve teamed up with great British producers, The Tomato Stall. Their Isle of Wight tomatoes are heralded as some of the best among chefs and foodies. Situated in Borough Market, so much of what we do is led by the seasons, so we’re delighted to mark the changing season with this exclusive online workshop. Together with our bakery teachers you’ll develop your bread making and pastry skills whilst learning to create three delicious savoury dishes. We’re thrilled to combine great British baking with great British produce this Autumn.
A SEASON’S EATINGS
Every month we look to the market and its variety of seasonal produce in our culinary classes dedicated to seasonal eating. These sessions aim to develop your knowledge of seasonal produce as well as incorporating different culinary techniques and hopefully inspire you to try some new recipes and ingredients. Each session is hosted live on Friday evenings with the dinner table very much in mind, join Catherine as she guides you through each recipe all in time for an 8pm dinner time. Check our page each month to see what’s on the menu.
BRITISH REGIONAL
September sees the arrival of another key date on the foodie calendar; British Food Fortnight begins 18th September, we need little excuse to celebrate Great British produce. Our British regional online class highlights some of Britain’s most loved bakes and aims to develop your knowledge and expertise of traditional baking methods. Our bakewell tart follows a classic recipe, you’ll learn how to prepare sweet pastry, a baking staple in every kitchen. Layered with homemade almond frangipane; a wonderful recipe to master, and a key ingredient in French patisserie. You’ll also bake a traditional Welsh bara brith and plain scones, we’re more than happy to share our tips and tricks to creating the most delicious and light scones possible!
SCANDINAVIAN
The love of Scandinavian bakes has grown considerably in the UK, over the years at Bread Ahead we have certainly drawn much inspiration from this part of the World. Our online Scandinavian class features two exclusive recipes Matthew developed over the course of 2020 and have become firm favourites with the team and our members. This online baking class is a wonderful introduction to more novice bakers looking to develop their skills in laminated pastries. Our saffron buns use a traditional croissant dough and preparation, the result is a wonderfully flaky bun perfectly balanced between sweet and savoury, not to mention the wonderful vibrant yellow interior. The blueberry and rye pastry tart is not to be missed either!
